Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. In a bowl, beat the egg yolks and powdered sugar together for one hour.

  2. Gently fold in the corn-starch and lemon flavoring.

  3. In another bowl, beat the egg whites until stiff peaks form, then fold them into the mixture.

Bake

  1. Pour the batter onto a baking sheet and bake at 350°F (175°C) for 35 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Powdered sugar
Sweetens the batter and helps give the cookies a fine, tender texture.
Egg yolks
Add richness and bind the batter together with fat and protein.
Egg whites
Whipped to stiff peaks, they trap air that lightens the batter and helps it rise.
Corn-starch
Softens the protein structure, giving the cookies a delicate, crumbly tenderness.

The step that matters

Fold in the whipped egg whites gently. Stiff egg whites hold air that makes the batter light. Stirring vigorously deflates the foam, so the cookies bake up dense and flat instead of airy.
