Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lamb breast
Provides the meat that becomes tender during long, gentle stewing.
Butter
Enriches the gravy and adds richness to the sauce.
Flour
Thickens the gravy, giving it body when cooked with the fat and stock.
Green peas
Adds sweetness and a bright color to the finished plate.

The step that matters

Thicken the gravy with butter and flour. Flour must be cooked with the fat and liquid until it boils to thicken properly. Adding it without bringing the gravy to a boil can leave the sauce starchy and thin.

Swap the peas

How well each one fits the dish's main ingredients (lamb, pepper, butter, flour, mushroom):

  1. Almondfits better
  2. Beansfits better
  3. Chickpeafits better
  4. Peasthe original

Fit is the average pairing score against lamb, pepper, butter, flour, mushroom. Candidates are from the same food group and used in at least 100 recipes.
