Why it works: Cinnamon and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓
Cantelope Pickles
Ingredients
Directions
Prepare the fruit
Wash, peel, and cut the cantaloupes into small pieces, removing the seeds.
Cover the cantaloupe pieces with vinegar and let them sit for 24 hours.
Discard 1 quart of the vinegar for every quart remaining.
Make the syrup
In a pot, combine the remaining vinegar, sugar, cinnamon, cloves, and allspice.
Boil the mixture and skim off any foam.
Add the cantaloupe to the pot and boil for 15 minutes.
Remove the cantaloupe, then boil the syrup again and skim it.
Pack
Pour the boiling hot syrup over the fruit.
