What each ingredient does

Indian meal
Cornmeal thickens the milk as it bakes, giving the pudding its body and a soft, spoonable set.
Molasses
Adds sweetness and deep flavor, and its color gives the pudding its brown tone.
Milk
Forms the liquid base that the cornmeal swells into and sets during baking.
Butter
Adds richness and fat, softening the texture and carrying flavor.
Eggs (in the method)
Not in the record; omitted.

The step that matters

Stir in the cold water just before baking. Cold water cools the hot batter slightly so it does not start setting unevenly before it reaches the oven, and it keeps the texture loose and even as the cornmeal cooks through.

Swap the ginger

How well each one fits the dish's main ingredients (butter, molasses, milk):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Clovefits about as well
  4. Gingerthe original

Fit is the average pairing score against butter, molasses, milk. Candidates are from the same food group and used in at least 100 recipes.
