Roast Saddle of Lamb

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Wipe the saddle of lamb with a wet cloth, then with a dry cloth.

  2. Preheat the oven to 400°F (200°C).

  3. Place the lamb in the oven and baste frequently while baking.

  4. Bake for about 2 to 3 hours, depending on the size of the roast.

  5. Serve with mint sauce and fresh salad, along with peas, cauliflower, or spinach.
