Apple Charlotte

Ingredients

Directions

  1. Peel the apples thinly with a sharp knife.

  2. Cut the apples into slices and remove the core.

  3. Place the apples in a saucepan with enough sugar to sweeten and ½ cup of water.

  4. Wipe the lemon clean and peel it thinly.

  5. Tie the lemon rind with twine and add it to the saucepan with the apples.

  6. Heat the saucepan on the fire, stirring until it boils and the apples reduce to about half their quantity, about 1 to 1.5 hours.

  7. Remove the saucepan from the heat and let it cool on a paper on the table, then take out the lemon peel.

  8. Use a round tin mold (about 1.5 pints) for shaping.

  9. Cut a slice of bread about ⅛ inch thick and round to fit the mold.

  10. Melt and clarify ¼ cup of butter in a saucepan.

  11. Cut the round bread into quarters, dip them in the clarified butter, and place them at the bottom of the mold.
