Marmalade Pudding

Ingredients

Directions

  1. Boil a saucepan of warm water.

  2. Chop the suet finely after removing the skin.

  3. Sift the bread crumbs through a wire sieve to obtain 3 oz.

  4. In a bowl, combine 3 oz flour, ¼ teaspoon coarse sea salt, and the chopped suet; rub together to avoid lumps.

  5. Add the bread crumbs and 4 oz moist sugar, then grate the lemon rind into the mixture.

  6. Incorporate 1 oz candied peel and 3 tablespoons marmalade, mixing well.

  7. Squeeze the lemon juice into the mixture, add 1 egg, and mix thoroughly.

  8. Butter a pint basin and pour the mixture in until full.

  9. Prepare a pudding cloth by wetting it in warm and then cold water, sprinkle with flour, cover the basin, and tie securely with string.
