Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Mix corn starch with cold water.

  2. Pare the rind of the lemons thinly and steep in boiling water for ten minutes.

  3. Separate the yolks and whites of the eggs; squeeze the lemons.

Make the filling

  1. Pour boiling water over the corn starch mixture; cook for 1-2 minutes until clear and thick.

  2. Add sugar and stir for one minute.

  3. Add egg yolks and cook for one minute.

  4. Stir in lemon juice and butter, then remove from heat.

Fill and finish

  1. When cooled, fill into a baked pastry shell and use the egg whites for meringue.

  2. Brown the meringue in a cool oven at 300°F (150°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn starch
Thickens the filling into a smooth, sliceable custard as it cooks.
Eggs
Egg yolks enrich and set the filling; whites are whipped into the meringue topping.
Lemon juice
Provides the sharp acidity that balances the sweetness of the filling.
Sugar
Sweetens the filling and helps stabilise the meringue.
Butter
Adds richness and a silky mouthfeel to the filling.

The step that matters

Cooking the filling after the starch thickens. Cornstarch must reach a boil to fully thicken, but the egg yolks can scramble if overheated. Cook gently and stir constantly so the filling becomes smooth and thick without curdling.
