Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn starch
Thickens the sauce as it heats, giving it body and a smooth texture.
Butter
Adds richness and a glossy finish to the sauce.
Lemon
Adds acidity and bright aroma that balances the sweetness.
Sugar
Provides sweetness and helps set the sauce's flavor profile.

The step that matters

Adding the cornstarch slurry. Cornstarch must be fully dissolved in cold water before it goes into the hot syrup, otherwise it clumps. Cooking it until the mixture thickens activates the starch and gives the sauce its body.
