Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. In a large bowl, combine molasses, sugar, and cold shortening.

  2. Add flour and baking soda, mixing well.

  3. Pour boiling water over the mixture and stir until combined.

  4. Add ginger and coarse sea salt to taste.

Bake

  1. Pour the batter into a greased baking pan.

  2. Bake in a slow oven at 300°F (150°C) until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Molasses
Adds dark color, moisture and the characteristic deep, sweet flavor.
Flour
Provides the structure that sets the batter into a crumb as it bakes.
Baking soda
Reacts with the molasses acidity to lift the batter and deepen its browning.
Shortening
Adds fat that gives the crumb tenderness and a soft texture.

The step that matters

Pouring in the boiling water. Boiling water melts the shortening and dissolves the baking soda evenly through the batter. Stirring only until combined keeps the crumb tender rather than tough from overworked gluten.

Swap the ginger

How well each one fits the dish's main ingredients (molasses, sugar, flour):

  1. Cinnamonfits better
  2. Jalapenofits better
  3. Gingerthe original
  4. Nutmegfits about as well

Fit is the average pairing score against molasses, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
