Why it works: Butter and milk are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 81,283 recipes. Both carry (z)-4-heptenal, which smells biscuit, cream. The science ↓
Sweetbreads Served with Peas
Ingredients
Directions
Soak the sweetbreads in cold water for about 1 hour.
Boil the sweetbreads in salted water until tender, then plunge them into cold water to firm up.
Remove the skin and pipes from the sweetbreads and set aside.
In a stewpan, combine the sweetbreads with additional salt, pepper, butter, milk, and enough flour to create a gravy.
Cook the peas separately.
When ready to serve, place the sweetbreads in the center of a dish and pour the peas around them.
