  2. Dissolve the baking soda in the boiling water and add it to the molasses mixture.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Molasses
Adds sweetness, dark colour and a moist, sticky texture to the gingerbread.
Baking soda
Reacts with the acidic molasses to produce gas, helping the gingerbread rise.
Flour
Provides the structure that holds the gingerbread together as it bakes.
Butter
Adds fat for richness and a tender crumb.
Ginger
Contributes the warm, pungent spice flavour that defines gingerbread.

The step that matters

Dissolving the baking soda in the boiling water. Baking soda needs to be fully dissolved so it reacts evenly with the acidic molasses. Undissolved pockets can cause uneven rising and dark spots or a bitter taste in the finished cake.

Swap the ginger

How well each one fits the dish's main ingredients (molasses, butter, flour, clove, cinnamon):

  1. Nutmegfits better
