What each ingredient does

Eggs
Bind the batter together and help set the pudding structure as it cooks.
Suet
Adds fat that keeps the pudding moist and rich in texture.
Stale bread crumbs
Absorb the liquid and give the pudding its body and crumb.
Brandy
Adds aroma and flavor while helping preserve the pudding.
Raisins
Add sweetness and chewy texture throughout the pudding.
Currants
Contribute concentrated fruit sweetness and chewy texture.

The step that matters

Boil for 6 hours immediately after preparing. Long, steady boiling cooks the eggs and starches through and sets the dense batter. Letting the water drop below a simmer can leave the pudding heavy and undercooked.

Swap the currant

How well each one fits the dish's main ingredients (raisin, bread, sugar, lemon, orange, flour, nutmeg):

  1. Figfits better
  2. Vanillafits better
  3. Limefits better
  4. Currantthe original

Fit is the average pairing score against raisin, bread, sugar, lemon, orange, flour, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
