What each ingredient does

Rice flour
Starch that thickens as it cooks and sets the jelly into a firm, tender body.
Boiling water
Hydrates the rice flour and carries the heat that turns the starch translucent and thick.

The step that matters

Boil until the rice is transparent. Rice starch must be cooked fully so it swells and gelatinizes; stopping early leaves a cloudy, pasty texture that will not set firmly as it cools.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
