What each ingredient does

Vinegar
Acid that preserves the peaches and gives the pickle its sharp flavour.
Brown sugar
Sweetens the brine and balances the sharpness of the vinegar.
Clingstone peaches
Firm-textured fruit that holds its shape in the hot brine as it steeps.
Cloves
Adds warm spiced aroma to the peaches as they steep.

The step that matters

Return the boiling liquid to the peaches and cover closely. The liquid must be kept very hot when it goes back over the fruit, since heat helps the brine penetrate and flavour the peaches. Covering closely traps the heat and aroma so less of it escapes during standing.

Swap the clove

How well each one fits the dish's main ingredients (vinegar, sugar, peach):

  1. Cinnamonfits better
  2. Peppermintfits better
  3. Gingerfits about as well
  4. Clovethe original

Fit is the average pairing score against vinegar, sugar, peach. Candidates are from the same food group and used in at least 100 recipes.
