Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Beaten and folded in, they trap air and give the cake a light, airy structure as it sets.
Potatoes
Form the bulk of the cake, providing body and moisture to the mixture.
Powdered sugar
Adds sweetness and dissolves easily into the cooled potato mixture.

The step that matters

Folding in the beaten egg whites. Folding gently keeps the air bubbles in the whipped whites. Stirring vigorously deflates them, which leads to a denser cake with less lift.

Swap the potato

How well each one fits the dish's main ingredients (sugar, vanilla, egg, butter, bread):

  1. Sweet potatofits better
  2. Arrowrootfits better
  3. Asparagusfits about as well
  4. Potatothe original

Fit is the average pairing score against sugar, vanilla, egg, butter, bread. Candidates are from the same food group and used in at least 100 recipes.
