Why it works: Cinnamon and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. In a large bowl, mix together the brown sugar, cold coffee, raisins, and molasses.

  2. In another bowl, cream the butter until smooth.

  3. Add the butter to the mixture and stir well.

  4. In a separate bowl, combine the flour, cinnamon, cloves, and baking powder.

  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

  6. Pour the batter into a greased baking pan.

Bake

  1. Bake for 30-40 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure that holds the cake together as it bakes.
Butter
Adds fat for a tender crumb and rich flavor.
Brown sugar
Adds sweetness and moisture, and helps the cake brown.
Molasses
Adds moisture, deep sweetness, and a darker color.
Baking powder
Releases gas during baking so the cake rises.

The step that matters

Adding the dry ingredients to the wet mixture. Stir only until just combined. Overmixing develops gluten in the flour, which makes the cake tough and dense instead of tender.

Swap the clove

How well each one fits the dish's main ingredients (sugar, coffee, raisin, molasses, flour, butter, cinnamon):

  1. Nutmegfits better
  2. Cardamomfits about as well
  3. Clovethe original
  4. Allspicefits about as well

Fit is the average pairing score against sugar, coffee, raisin, molasses, flour, butter, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
