Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lamb
Gives the broth its rich, meaty flavour as it simmers for hours.
Shelled peas
Provide the main green colour and sweet, fresh flavour of the soup.
Young potatoes
Soften as they cook, adding body and starch that thicken the soup slightly.
Butter and flour
Form a roux-like paste that thickens the soup and adds richness when stirred in.

The step that matters

Skimming the surface after the first 2 hours. Foam and impurities rising from the meat cloud the broth if left in, so skimming keeps the soup clear and clean-tasting.

Swap the peas

How well each one fits the dish's main ingredients (lamb, pepper, potato, butter, flour):

  1. Almondfits better
