Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and gradually add the brown sugar, mixing until well combined.

  3. Add the yolks of 4 eggs and the whites of 2 eggs, mixing well.

  4. Alternately add the sour milk and flour to the mixture.

  5. Mix the spices and baking soda with the last half cup of flour, then fold into the batter.

Bake and finish

  1. Pour the batter into a greased cake pan and bake for 30 to 45 minutes.

  2. Once baked, ice it with boiled icing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Provide structure when set and add moisture and richness to the crumb.
Flour
Forms the structure that holds the cake's shape as it bakes.
Butter
Adds fat that tenderizes the crumb and carries flavor.
Brown sugar
Adds sweetness, moisture, and the molasses flavor typical of spice cake.
Sour milk
Its acidity reacts with baking soda to help the cake rise and adds tenderness.
Baking soda
Reacts with the acidic sour milk to produce gas that lifts the batter.

The step that matters

Folding in the spices and baking soda. Folding gently keeps the air in the batter so the cake rises evenly. Overmixing develops gluten, which can make the crumb dense and tough.

Swap the clove

How well each one fits the dish's main ingredients (sugar, milk, flour, butter, nutmeg, cinnamon, egg):

  1. Cardamomfits better
  2. Allspicefits about as well
  3. Clovethe original
  4. Gingerfits less well

Fit is the average pairing score against sugar, milk, flour, butter, nutmeg, cinnamon, egg. Candidates are from the same food group and used in at least 100 recipes.
