Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Beat the yolks of the eggs in a pudding dish and add the sugar.

  3. Dissolve the corn starch in a little cold water, then stir it into the boiling water.

  4. Add the lemon juice and grated peel to the mixture, then mix in the butter.

Bake and serve

  1. Bake for about 15 minutes.

  2. Spread the beaten egg whites over the top, sweeten them, and let them color briefly in the oven.

  3. Serve hot or cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the lemon filling into a rich, set custard base.
Corn starch
Thickens the boiling water into a glossy, sliceable filling.
Sugar
Sweetens the filling and balances the sharpness of the lemon.
Lemon juice
Adds acidity and bright lemon flavor to the filling.
Egg whites
Form a light meringue topping that browns in the oven.

The step that matters

Stirring the cornstarch into the boiling water. Cornstarch must be fully dissolved in cold water first, then added to boiling liquid and stirred, so the starch granules swell evenly and thicken without lumps.
