  2. Grease a pie plate and sprinkle with stale bread crumbs to form a crust.

Make the pudding

  1. In a bowl, stir together the cream, sugar, egg yolks, and nutmeg.

  2. Gently fold in the beaten egg whites.

  4. Sprinkle a layer of bread crumbs on top.

Bake

  1. Bake until set and lightly browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides richness and moisture, giving the pudding a soft, creamy body.
Egg yolks
Enrich the custard and help it set into a tender, sliceable texture when baked.
Egg whites
Beaten into the mixture to add lightness and help the pudding rise and hold air.
Sugar
Adds sweetness and helps the custard brown lightly in the oven.
Stale bread crumbs
Form a crust on the base and top, adding texture and a toasted surface.

The step that matters

Folding in the egg whites. Folding gently keeps the beaten whites full of air. Stirring or deflating them makes the pudding dense rather than light.
