Why it works: Raisin and flour match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,075 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

  2. Add the bread crumbs and graham flour, then beat in the eggs until well combined.

  3. Pour the mixture into a greased pudding mold.

  1. Steam for 3 hours or bake at 350°F (175°C) for 2 hours.

  2. Serve with lemon sauce.

Baking soda
Reacts with the molasses's acidity to help the pudding rise and lighten.
Graham flour
Provides the body and structure of the pudding, with a slightly nutty flavor.
