Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef suet
Adds fat that keeps the pudding moist and rich as it steams.
Stale bread crumbs
Absorb the milk and provide the body that holds the pudding together.
Eggs
Bind the mixture and help it set firm during steaming.
Figs
Contribute sweetness, chewy texture and fruity flavor.
Sugar
Adds sweetness and contributes to a tender, moist crumb.

The step that matters

Steam for three hours. Steaming gently and steadily cooks the eggs and starch through without drying the pudding. Letting the water boil dry or the steam drop can leave the texture uneven or the pudding underdone.

Swap the fig

How well each one fits the dish's main ingredients (beef, bread, milk, egg, sugar):

  1. Vanillafits better
  2. Figthe original
  3. Raisinfits about as well
  4. Pumpkinfits less well

Fit is the average pairing score against beef, bread, milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
