What each ingredient does

Stale bread
Forms the body of the pudding, soaking up custard so it sets into a sliceable structure.
Eggs
Set the custard as they cook, binding the milk into a tender, firm pudding.
New milk
Forms the liquid custard base that soaks into the bread and sets with the eggs.
Butter
Adds richness and helps the bread brown lightly and separate from the basin.
White sugar
Adds sweetness that balances the tart lemon and the savory-rich custard.

The step that matters

Steam gently. Egg custard turns grainy, watery, or spongy if it boils or cooks too hard. Gentle steam heats the eggs slowly so the custard sets smooth and tender.

Swap the lemon

How well each one fits the dish's main ingredients (bread, butter, sugar, milk, egg):

  1. Vanillafits better
