Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Larded Sweetbreads

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Trim the sweetbreads and remove all fat. Insert 5 lardoons into each sweetbread.

  2. Dredge with coarse sea salt, black pepper, and flour. Place on a rack in a baking pan.

  3. Bake at 400°F (200°C) for 30 minutes, basting with brown stock.

  4. Drain the peas and rinse in cold water. Place in fresh cold water and bring to a boil.

  5. Drain the peas again, then add a little butter, black pepper, coarse sea salt, and a pinch of sugar.

  6. Heat the peas and pile them on a platter. Cover with white sauce and place the sweetbreads on top.

  7. Garnish with parsley.
