Lemon Bread Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the custard

  1. Preheat the oven to 350°F (175°C).

  2. Separate the eggs, beating the yolks in a bowl and placing the whites in a cool place.

  3. Add granulated sugar to the yolks, then mix in the milk, bread crumbs, and grated lemon rind.

  4. Pour the mixture into a baking dish and bake for about 30 minutes.

Top and finish

  1. Remove from the oven and beat the egg whites until stiff.

  2. Gradually add powdered sugar to the egg whites, then mix in the lemon juice.

  3. Spread the egg white mixture on top of the pudding and return it to the oven with the door open for 20 minutes, turning occasionally to brown evenly.

  4. Optionally, spread jam or preserves over the pudding before adding the egg whites.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the custard while whites whip into a meringue topping that sets and browns.
Bread crumbs
Absorb the milk and eggs, giving the pudding its body and soft texture.
Milk
Provides the liquid that sets with the eggs into a tender custard.
Powdered sugar
Dissolves easily into the whipped whites, stabilizing the meringue and adding sweetness.
Lemon juice
Adds acidity and bright flavor that balances the sweetness of the pudding and meringue.

The step that matters

Beating the egg whites until stiff. Whites must be whipped to firm peaks before the sugar is added. Under-whipped whites will weep or collapse on top of the pudding, while the proteins in fully whipped whites trap air that sets and browns in the oven.
