Lemon Jelly

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Soak the gelatine in cold water for 2 hours.

  2. Pour boiling water over the gelatine, cinnamon, and lemon rind; cover and soak for 5 minutes.

  3. Add sugar and stir until dissolved.

  4. Add lemon juice, strain, and pour into a mold dipped in cold water.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
