Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Sift the ginger and salt into the molasses.

  2. Dissolve the baking soda in the warm water and strain it into the molasses.

  3. Add the softened cottolene and enough flour to make a soft dough.

Shape and bake

  1. Roll out the dough to ½ inch thick and cut into small rounds.

  2. Bake in a hot oven at 400°F (200°C) until done.

What each ingredient does

Molasses
Provides the main sweetness, dark color and rich flavor of the cookies.
Baking soda
Reacts with the molasses acidity to lighten the dough and help it rise.
Cottolene
Adds fat that keeps the cookies tender and moist.
Flour
Provides structure so the soft dough can be rolled and cut.
Ginger
Adds the warm, spicy aroma that suits molasses.

The step that matters

Dissolving the baking soda in the warm water. Baking soda needs to be fully dissolved and evenly spread through the molasses, otherwise pockets of soda can leave bitter or soapy spots and uneven rising.

Swap the ginger

How well each one fits the dish's main ingredients (molasses, flour):

  1. Jalapenofits better
  2. Cinnamonfits better
  3. Allspicefits about as well
  4. Gingerthe original

Fit is the average pairing score against molasses, flour. Candidates are from the same food group and used in at least 100 recipes.
