German Pudding

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Butter a baking pan.

Layer and bake

  1. Layer the bread crumbs, then the suet, followed by a mixture of apples and sugar seasoned with lemon peel and cloves.

  2. Repeat the layers until the pan is full, always placing sugar and apples together.

  3. Bake for 20 minutes.

What each ingredient does

Bread crumbs
Form the bulk of the layers and soak up moisture from the apples and suet.
Suet
Adds fat that enriches the pudding and keeps the layers moist as they cook.
Apples
Provide moisture and tartness that balance the sugar and soften during baking.
Sugar
Adds sweetness and helps draw moisture from the apples into the pudding.
