Molasses Pound Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure. The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, cream the butter and sugar together until smooth.

  3. Add the eggs one at a time, mixing well after each addition.

  4. Stir in the molasses and milk until combined.

  5. Mix in the pearlash and spices to your liking.

  6. Gradually add flour until the batter is the same thickness as pound cake batter.

  7. Pour the batter into a greased cake pan and bake for about 1 hour or until a toothpick comes out clean.
