Why it works: Rice and cinnamon match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 2,137 recipes. Both carry guaiacol, which smells smoky, sweet. The science ↓
Rice Fritters
Ingredients
Directions
Make the rice mixture
Wash, drain, and dry the rice.
In a saucepan, combine the rice, sugar, lemon zest, cinnamon, and milk.
Boil while stirring frequently for 45 minutes.
Rub the mixture through a fine sieve.
Add the eggs
Beat the egg yolks and whites separately; add the yolks to the mixture and beat for 10 minutes.
Fold in the beaten egg whites and beat for an additional 5 minutes.
Fry and serve
In a small omelet pan, fry spoonfuls of the mixture in butter until golden on both sides.
Drain on paper towels, sift fine loaf sugar over the fritters, and serve on a neatly folded napkin.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Rice
- Gives the mixture body, so it thickens into a soft, set batter once cooked.
- Eggs
- Yolks enrich and bind the mixture; beaten whites add lightness and help the fritters rise.
- Milk
- Cooks with the rice to form a creamy base and adds moisture to the fritters.
- Sugar
- Sweetens the mixture and helps the fritters brown golden in the butter.
- Butter
- Fries the fritters, adding fat for a golden crust and rich flavor.
The step that matters
Folding in the beaten egg whites. Whites hold air only when beaten separately and folded in gently. Stirring them hard deflates the foam, so the fritters turn out dense instead of light.

Fit is the average pairing score against rice, sugar, cinnamon, milk, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
