Why it works: Raisin and nutmeg are a kitchen classic. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,377 recipes. Both carry alpha-terpineol, which smells lilac, floral. The science ↓
Hot Cabinet Pudding
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Butter a mold and sprinkle the sides and bottom with currants.
Layer the bread crumbs in the mold, adding raisins between the layers.
Beat the eggs, then add sugar, salt, nutmeg, and hot milk.
Pour this mixture over the bread crumbs.
Let it stand in a cold place for one hour.
Steam for one hour, or for half an hour if using cups.
To bake, place the mold in a pan of water in a 350°F (175°C) oven, ensuring the water does not boil.
Serve on a platter with cream or hard sauce.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
