Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, mix the flour, ground rice, salt, and powdered sugar.

Make the batter

  1. In another bowl, beat the egg yolks and 6 egg whites until fluffy.

  2. Add lemon essence or grated lemon peel to the egg mixture.

  3. Sift the flour mixture into the egg mixture and gently combine.

  4. Pour the batter into a prepared tin or paper, leaving room for it to rise.

Bake

  1. Bake for 40 minutes or until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Provides the main structure that holds the cake together as it bakes.
Eggs
Whipped whites trap air for rising, while the yolks add richness and help bind the batter.
Ground rice
Gives the cake a fine, slightly tender crumb and a distinct texture.
Powdered sugar
Sweetens the cake and softens its texture.
Lemon essence or grated lemon peel
Adds a bright citrus aroma that flavours the cake.

The step that matters

Sift the flour mixture into the egg mixture and gently combine.. Whipped eggs hold air that makes the cake rise. Vigorous stirring deflates that foam and leads to a dense cake, so fold gently.

Swap the lemon
