Stewed Peas

Ingredients

Directions

Prepare

  1. Pick and shell garden peas with clean hands. If using market peas, wash the pods before shelling.

  2. Place shelled peas in a colander to remove fine particles and undeveloped blossoms.

  3. Sort the peas by size; cook older peas for 10 minutes before adding younger ones.

Stew

  1. In a porcelain kettle, add boiling water for young peas. Cover and simmer gently until tender.

  2. Cook young peas for 25-30 minutes and older peas for 40-50 minutes.

Serve

  1. Serve without draining, seasoning with salt and sweet cream to desired juiciness.

  2. If preferred, thicken the juice with a little flour before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peas
Form the body of the dish, softening as they stew to a tender texture.
Sweet cream
Adds richness and a smooth, velvety texture to the pot liquor.
Flour
Thickens the cooking juice so it clings to the peas.

The step that matters

Sort the peas by size before cooking. Older and younger peas need different cooking times. Adding them together leaves young peas mushy or older peas still firm, so cooking older peas first for 10 minutes helps both reach tenderness together.

Swap the peas

How well each one fits the dish's main ingredients (cream, flour):

  1. Almondfits better
  2. Pistachiofits better
  3. Cashew nutfits better
  4. Peasthe original

Fit is the average pairing score against cream, flour. Candidates are from the same food group and used in at least 100 recipes.
