Soft Gingerbread

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare and mix

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the cream and molasses together.

  3. Add the ginger and baking soda, and stir until well combined.

Bake

  1. Pour the batter into a greased baking dish.

  2. Bake for 25-30 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Adds moisture and richness, helping the crumb stay tender.
Molasses
Adds sweetness, moisture, and deep color, and its acidity reacts with the baking soda.
Ginger
Provides the warm, spicy aroma and flavor that defines the gingerbread.
Baking soda
Reacts with the acidic molasses to release gas, lifting and lightening the batter.

The step that matters

Stir the baking soda in until well combined. Baking soda must be evenly distributed so it reacts with the acid in the molasses throughout the batter, producing gas for an even rise. Baking soon after mixing keeps that gas in the batter.

Swap the ginger

How well each one fits the dish's main ingredients (cream, molasses):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Gingerthe original
  4. Clovefits about as well

Fit is the average pairing score against cream, molasses. Candidates are from the same food group and used in at least 100 recipes.
