What each ingredient does

Neck of mutton
Provides rich meaty flavour and body as it simmers until tender.
Pickled pork
Adds salty, savoury flavour and fat to the broth.
Lobster or crab
Adds sweet seafood flavour to the stew when added near the end.
Vegetables
Contribute body, sweetness and flavour to the broth as they cook.

The step that matters

Adding the lobster or crab. Shellfish cooks quickly and turns tough and rubbery if overcooked, so it is added only half an hour before serving, once the meat has been removed from the shell.
