What each ingredient does

Green peas
Provide the main body and vegetable flavor of the soup.
Butter
Adds richness and fat, helping carry flavor through the soup.
Onions
Build savory aromatic flavor as they soften in the butter.
Lettuces
Add body and a mild, sweet vegetable flavor to the soup.
French rolls
Their crumb thickens the soup and gives it a fuller texture.
Spinach
Adds green color and a fresh, earthy flavor when rubbed through.

The step that matters

Rub the soup through a sieve. Pressing the cooked vegetables and crumb through a sieve breaks them down into a smooth, even texture. Skipping or rushing this leaves the soup grainy and uneven in color.

Swap the onion

How well each one fits the dish's main ingredients (peas, butter, ham, lettuce, spinach, sugar):

  1. Beetrootfits better
  2. Leekfits better
  3. Asparagusfits better
