Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Mix corn starch with cold water.

  2. Pare the rind of the lemon thinly and steep in boiling water for ten minutes.

  3. Separate the yolks and whites of the eggs; squeeze the lemon.

Make the filling

  1. Pour boiling water over the corn starch mixture; cook for 1-2 minutes until clear and thick.

  2. Add sugar and stir for a minute, then add egg yolks and cook for another minute.

  3. Stir in lemon juice and butter, then remove from heat.

Assemble and bake

  1. Once cooled, fill a baked pastry shell with the mixture and use the egg whites for meringue.

  2. Brown the meringue in a slow oven at 300°F (150°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn starch
Thickens the filling into a smooth, sliceable custard as it cooks.
Eggs
Egg yolks enrich and set the filling; whites whip into the meringue topping.
Sugar
Sweetens the filling and helps the meringue stay glossy and stable.
Lemon juice
Adds acidity that balances the sweetness and gives the filling its bright flavor.
Butter
Adds richness and a smoother, silkier texture to the filling.

The step that matters

Cooking the cornstarch mixture. Cornstarch must reach a full boil to thicken properly; undercooked starch leaves a thin, runny filling. Stirring keeps it smooth and prevents lumps.
