Queen of Puddings

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the pudding

  1. Soak the bread crumbs in milk until soft.

  2. Beat the egg yolks, sugar, and salt together, then add to the soaked bread and milk along with the butter and lemon rind.

  3. Mix thoroughly and bake in a 400°F (200°C) oven until set but not watery.

Finish and frost

  1. Once cooked, spread with jelly.

  2. For the frosting, mix the egg whites, lemon juice, and sugar, then whip until light.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Soak up the milk and egg to form the soft body of the pudding.
Egg yolks
Enrich the custard and help it set into a tender texture.
Milk
Provides the liquid that soaks the bread and forms the custard.
Egg whites
Whipped to form a light, airy frosting.
Sugar
Sweetens the pudding and helps the frosting whip and hold its shape.

The step that matters

Bake until set but not watery. Egg proteins set with heat, so underbaking leaves a runny centre while overbaking can make the custard curdle or weep. Checking for a firm set rather than only the clock helps achieve a smooth, sliceable texture.

  2. Figbetter flavor fit
  3. Peachabout as good a flavor fit
  4. Lemonthe original

Fit is the average pairing score against bread, milk, egg, butter, sugar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
