Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, beat 4 eggs and add 2 cups of brown sugar, 1 cup of milk, ¾ cup of butter, 2 cups of flour, 2 to 3 teaspoons of baking powder, 1 tablespoon of ground cloves, and 1 tablespoon of cinnamon. Mix until well combined.

  3. Pour the batter into a long pan and bake until golden.

Make the frosting and finish

  1. Beat the 3 reserved egg whites until stiff, then gradually add ¾ cup of brown sugar.

  2. Spread the frosting on the cake when it is cold and brown it in the oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten eggs add structure and help bind the batter as it sets in the oven.
Butter
Adds fat for a tender crumb and rich flavour.
Flour
Provides the main structure that sets the cake as it bakes.
Baking powder
Releases gas during baking so the cake rises and becomes light.
Brown sugar
Adds sweetness, moisture and a caramel-like flavour to the cake and frosting.
Egg whites
Whipped until stiff, they form a foam that gives the frosting its airy body.

The step that matters

Spreading the frosting on a cold cake, then browning it. The cake must be fully cold so the meringue-style frosting does not melt or slide off. Browning in the oven then sets and colours the sugar-egg white topping, so watch it closely to avoid burning.

Swap the clove

How well each one fits the dish's main ingredients (egg, sugar, milk, butter, flour, cinnamon):

  1. Nutmegfits better
  2. Cardamomfits better
  3. Allspicefits about as well
  4. Clovethe original

Fit is the average pairing score against egg, sugar, milk, butter, flour, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
