Ingredients

Directions

The book says “a very quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the sweetbreads

  1. Wash the sweetbreads and remove the tubes.

  2. Place them in boiling water with vinegar, salt, bay leaf, and onion. Cook gently for 45 minutes.

  3. Drain and save the cooking liquid for stock.

  4. Once cool, remove the membranes and place sweetbreads in a baking dish with chopped celery and boiling stock.

Bake and serve

  1. Bake at 400°F (200°C) for 45 minutes, basting frequently.

  2. Cover the bottom of a serving dish with green peas and place the sweetbreads on top.

What each ingredient does

Sweetbreads
Main protein; the tender texture is the centre of the dish.
Green peas
Forms the bed under the sweetbreads, adding sweetness and colour.
Celery
Adds moisture and mild aroma as it softens in the baking dish.
Stock
Keeps the sweetbreads moist and flavours the dish as it bakes.

The step that matters

Basting during the bake. Sweetbreads are lean and can dry out in the oven. Frequent basting with stock keeps the surface moist and helps it brown evenly.
