Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Form the bulk of the pudding and soak up the hot milk to create a soft body.
Milk
Provides liquid that hydrates the crumbs and gives the custard-like texture.
Egg yolks
Enrich and set the pudding, giving it a tender, custardy structure.
Egg whites
Whipped to stiff peaks to form a light meringue topping that browns in the oven.
Sugar
Sweetens the pudding and helps the meringue become stiff and brown.

The step that matters

Beat the egg whites until stiff. Egg whites must be whipped to stiff peaks so the topping holds its volume and bakes into a light, airy meringue rather than collapsing or weeping.
