  1. Peel the peaches and pack them in coarse sea salt. Let them stand for four days and nights.

  2. Remove the peaches, brush off the salt, and dry them in dishes for three days.

  3. Soak the peaches in water for twelve hours.

Pack and pour

  1. Layer the peaches in a jar, sprinkling spices between each layer.

  2. In a bowl, mix the vinegar with black mustard seed, white mustard seed, mustard powder, cayenne pepper, mace, cinnamon, ginger, horseradish, garlic, onions, black pepper, and turmeric.

  3. Pour the spice mixture over the layered peaches.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peaches
Form the main body of the pickle, absorbing salt, spice and vinegar flavour as they cure.
Vinegar
Provides the sharp acidity that preserves the fruit and gives the pickle its tang.
Black mustard seed
Adds sharp, pungent heat and a crisp bite when left whole in the pickle.
White mustard seed
Contributes mild pungency and texture alongside the black mustard seed.
Onions
Add savoury bulk and sweetness that softens as the pickle matures.

The step that matters

Drying the salted peaches. Salt draws water out of the fruit, so the peaches must be brushed clean and dried well before packing. Residual surface moisture or salt can dilute the vinegar, spoil the pickle, or leave it too salty.

Swap the mace

How well each one fits the dish's main ingredients (peach, vinegar, mustard, pepper, cinnamon, ginger, horseradish):

  1. Allspicefits better
  2. Clovefits better
  3. Turmericfits better
  4. Macethe original

Fit is the average pairing score against peach, vinegar, mustard, pepper, cinnamon, ginger, horseradish. Candidates are from the same food group and used in at least 100 recipes.
