Lemon Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, beat the egg whites until stiff peaks form and set aside.

  3. In another bowl, cream the butter and sugar together until light and fluffy.

Make the filling

  1. Add the egg yolks, sweet milk, corn starch, and lemon juice to the butter mixture and mix well.

  2. Gently fold in the beaten egg whites.

Bake

  1. Pour the mixture into a prepared crust and bake for about 30-40 minutes or until set.

What each ingredient does

Eggs
Yolks thicken and enrich the filling, while whipped whites lighten its texture.
Butter
Creaming with sugar traps air and adds richness and a tender crumb.
Sugar
Sweetens the pudding and helps cream the butter into a light base.
Sweet milk
Adds moisture and body to the filling.
Corn starch
Thickens the filling so it sets when baked.
Lemon juice
Provides the sharp acidity that defines the lemon flavour.

The step that matters

Folding in the egg whites. Whites hold air only when whipped to stiff peaks. Stirring them vigorously deflates the foam and makes the pudding dense, so fold gently and keep the mixture airy.

Swap the lemon

How well each one fits the dish's main ingredients (egg, butter, sugar, milk, corn):
