Meringue Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. Soak the bread crumbs in the sweet milk for about 15 minutes.

  2. Mix the soaked bread with 1 cup of sugar, lemon rind, salt, and beaten egg yolks.

  3. Pour the mixture into a deep dish and bake at 350°F (175°C) until it thickens like boiled custard.

Top with meringue and bake

  1. While baking, beat the egg whites to stiff peaks and gradually add the remaining 1 cup of sugar and lemon juice.

  2. Once the pudding is baked and almost cold, spread the meringue on top with a large spoon.

  3. Bake the meringue until it is a very light brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard as they set with heat, giving it a rich, sliceable body.
Bread crumbs
Absorb the milk and add body, giving the custard a soft, pudding-like texture.
Sweet milk
Forms the liquid base that the eggs set into a custard.
Egg whites
Whipped to stiff peaks to form a light, airy meringue topping.
Sugar
Sweetens the pudding and helps stabilize the whipped egg white meringue.

The step that matters

Baking the custard until it thickens. Egg yolks set when heated, so the pudding must bake until thickened. Underbaked custard stays runny and won't hold the meringue, while overbaking can make the eggs curdle and turn grainy.
