The Queen of Puddings

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, combine bread or cake crumbs, sweet milk, 1 cup sugar, beaten egg yolks, grated lemon rind, and butter. Mix well.

  3. Pour the mixture into a baking dish and bake until set and golden brown.

Top and finish

  1. In another bowl, beat the egg whites to stiff peaks, then gradually add 1 cup sugar and lemon juice to taste.

  2. Spread a layer of preserves or jelly over the baked pudding.

  3. Top with the meringue and return to the oven until lightly browned.

What each ingredient does

Bread or cake crumbs
Provide the bulk and body that the custard sets around.
Egg yolks
Thicken the custard as it bakes, giving it a set, rich texture.
Sweet milk
Supplies the liquid that the crumbs soak up and the eggs set in.
Egg whites
Whipped into a meringue that bakes to a light, browned topping.
Sugar
Sweetens the pudding and helps the meringue whip and brown.
Butter
Adds richness and fat for a tender, flavourful custard.

The step that matters

Beating the egg whites to stiff peaks. Egg whites must be whipped until stiff and the sugar added gradually so the foam holds its shape and bakes into a stable, light meringue rather than weeping or collapsing.

Flavor stand-ins for the lemon

How well each one fits the dish's main ingredients (bread, milk, sugar, egg, butter):

  1. Vanillabetter flavor fit
  2. Figbetter flavor fit
  3. Peachabout as good a flavor fit
  4. Lemonthe original

Fit is the average pairing score against bread, milk, sugar, egg, butter. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
