Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. In a large bowl, mix the suet, currants, raisins, and sugar.

  2. Add the eggs, salt, grated nutmeg, candied peel, allspice, bread crumbs, flour, and milk, then stir until well combined.

  2. Cover and steam for about 6 hours.

  3. Let it cool before serving.

What each ingredient does

Suet
Adds richness and fat that keeps the pudding moist and tender as it steams.
Eggs
Bind the mixture and set during steaming to give the pudding its structure.
Bread crumbs
Soak up liquid and lighten the texture so the pudding holds together without becoming dense.
Flour
Adds body and helps the batter set into a sliceable structure as it steams.
Sugar
Adds sweetness and contributes to the moist, tender crumb.
