Soft Ginger Snaps

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix the flour, ginger, and lard until well combined.

  3. In a separate bowl, dissolve the baking soda in the boiling water and add it to the molasses.

  4. Combine the molasses mixture with the flour mixture and stir until a dough forms.

Shape and bake

  1. Roll out the dough on a well-floured surface to ½ inch thick.

  2. Cut into desired shapes and place on a baking sheet.

  3. Bake in the preheated oven until brown.

What each ingredient does

All-purpose flour
Provides the structure that holds the dough together and sets as the cookies bake.
Molasses
Adds sweetness, moisture, and a dark color that deepens as the cookies brown.
Baking soda
Reacts with the molasses's acidity to lighten the dough and help the cookies spread and rise.
Lard
Adds fat that tenderizes the dough and gives the cookies a soft texture.
Ground ginger
Supplies the spicy, warm aroma that defines the cookie's flavor.

The step that matters

Dissolve the baking soda in boiling water before adding it to the molasses. Baking soda needs to be fully dissolved and mixed through the molasses so it reacts evenly. Uneven distribution leaves pockets of bitter soda and uneven rising.

Swap the ginger

How well each one fits the dish's main ingredients (flour, molasses):

  1. Jalapenofits better
  2. Cinnamonfits better
  3. Allspicefits about as well
  4. Gingerthe original

Fit is the average pairing score against flour, molasses. Candidates are from the same food group and used in at least 100 recipes.
