Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, mix dark brown sugar, granulated sugar, egg yolks, cinnamon, cloves, grated nutmeg, chopped almonds, citron, grated lemon, and lemon juice.

  3. In a separate bowl, beat the egg whites until stiff peaks form.

  4. Fold the beaten egg whites into the sugar mixture.

  5. Sift in the baking powder and flour, and mix until combined.

  6. Pour the batter into a long pan and bake until golden.

  7. Cut the cake while warm.
