Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn starch
Thickens the hot liquid into a smooth, sliceable filling as it cooks.
Egg
Adds richness and helps set the filling once combined and heated.
Sugar
Sweetens the filling and balances the sharpness of the lemon.
Lemon juice and rind
Provides the sharp, aromatic citrus flavour that defines the pie.
Butter
Adds fat for a smoother mouthfeel and rich flavour in the filling.

The step that matters

Stirring in the egg off the heat. Adding egg to a very hot starch mixture can scramble it into lumps. Removing the pan from heat first and stirring until well combined keeps the filling smooth and evenly set.
